SUN-DRIED TOMATO & BURRATA PASTA
Quick & Easy Pasta Recipe
Ingredients
- 1 Pound Rigatoni
- 1 Jar Sun-Dried Tomatoes Chopped
- Salt & Pepper
- 3 Cloves Garlic
- Oregano
- 1 Cup Basil
- 1 Lemon Zest & Juice
- 1 Can Tomato Paste
- 1/2 Cup Grated Parm
- 10 Ounces Burrata
Instructions
- Cook pasta in salted water
- Over medium heat in skillet, fry sun dried tomato oil, garlic, spices, lemon, basil etc for 4 mins
- Add tomato paste and cook for 2 mins
- Stir in some water and simmer
- Add in the sun dreid tomatoes and pasta
- Add parm and pepper
- Toss in basil, parsley, dill, etc
- Remove and top with burrata
