
Lemon Chicken Piccata & Pasta
Ingredients
- 1.4 lbs chicken breast
- 1 box spaghetti
- 1 cup heavy cream
- 1 cup chicken broth
- 4 tbsp butter
- 1/4 cup capers
- 2 lemons
Instructions
- boil water and cook pasta when ready
- heat oil and butter in skillet
- dice chicken breasts but not all the way through
- dredge breasts in flour
- add salt and pepper then fry breasts in butter and oil on both sides until cooked through
- put breasts in oven at 350 while you make the sauce
- add broth, cream, lemon juices, capers to skillet and bring to boil then let reduce and thicken
- serve chicken and pasta and pour sauce over top
