Marinate the sliced chicken in some sweet soya sauce, pepper, some of the ginger, and some mirin.
Chop all the vegetables.
Sauté the marinated chicken in heated avocado oil until browned…….remove chicken and store in bowl. Add a bit more oil and add onion and peppers. Let simmer, then add the rest of the ginger. Then add the peppers, fennel, squash, and mushrooms. Add some mirin and let simmer again with the lid on (not the green onion).
Add the chicken back in.
Add the chopped green onion when done, stir, and turn off heat.
Serve with steamed rice or cooked noodles.
Add some Ketjap and /or sambal oelek for taste.
